Lentil Lover

I stopped eating most legumes when I was 12 years old to spite my mother. She made me eat rice and beans for meal after meal because I was a vegetarian and she didn’t know better. So one day I declared I hated beans and never looked back.

Over the past few years I have been trying to incorporate beans back into my diet. It’s been a slow journey and I still have a ways to go.

Chickpeas were up first. It took me a while to warm up to them, but now I can’t get enough. Give me hummus for breakfast, roasted chickpeas for a snack, chickpea cutlets for lunch and falafel for dinner. Yep I could actually eat chickpeas for every meal. But it was time to introduce a new bean boyfriend, enter THE LENTIL.

It took a few tries, but I can now say that I am completely in love with lentils and we have a pretty strong relationship going. Last night I decided to try my hand at lentil burgers. Chickpeas had been the original burger-baby making machine, but I owed it to my new lover to give it a shot.

Mixed with some oats, basil and spices the lentils made a pretty mean burger. The burgers were kind of hard to get to stay together, but the taste was all there.

I could never ever count how many times I ate beans and rice growing up…A lot, a lot of black beans and rice, but other similar variations of beans and grains made it to my plate most days of the week too. My mom was always a great cook…but she never seemed to tire of beans and rice. Me on the otherhand quickly did, so when I moved out, I stopped eating the combo all together. But then I came back to it once I saw how easy it was to make the two delicious (and how hard it was to keep cooking day in and day out, and how thankful I became for my mom’s cooking.) I love beans now, especially chick peas, so I’m with you on that, but it’s all about switching up the other flavors you put with them.

  2. i don’t like rice and beans (together, as a dish), but i love lentils & chickpeas! 🙂 i think i’ve had the same 36 oz container of brown rice in my cupboard for 6 months… only use it when i make stir fry.

    have you tried french lentils? i like making a salad of warm roasted beets and french lentils over arugula or spinach, with either a red wine or balsamic vinaigrette.

  5. I like where this is all headed. I will now share with you one of my fav lentil recipes. It is for lentil sloppy joe’s and it is so very good.

    ok so brown and onion in some oil until soft. I would use a whole med yellow.
    you can also add in a bell pepper at this point. Then when the onions are almost done, throw some garlic up in there.
    Before we start you need to make some lentils. I usually put in like 1-2 dried cups of lentils. In another bowl of course.
    So once the onion mix is ready add the cooked lentils to the pan (you want a big skillet btw) and add to that a can of tomato paste (you can do it lauren), some oregeno, some chili powder, some salt and then let that simmer for 10 min. Stir a lot.
    At the end add a few teaspoons each of some really yummy mustard and maple syrup. Let that cook through for just a few minutes, until the consistency is sloppy joe like.

    Put it on a yummy bun with some lettuce and what have you and it is so good. I am so excited you are branching out. I am sure you won’t even mind the tomato paste in this because you are so food brave now.
