Autumn Latkes

Eric and I swear each week will make actual recipes with all the CSA produce we get. But by the time dinner rolls around it’s always easier to just roast them all together with some salt and pepper.

Well we finally got our butt in gear for dinner one night, and made the lovely Autumn Latkes from Veganomicon.

Autumn Latkes

The original recipe calls for beets, sweet potatoes and carrots, but I swapped out the carrots and used squash instead.
2 cups sweet potatoes, 1 cup beets, 1 cup squash all grated in the food processor. I then added some flour, cornstarch, salt and pepper and mixed. Finally I added water and stirred until the flour was dissolved.

We pan fried these on the stove, but I would love to try and bake the latkes sometime.

  1. Those look AWESOME. I have been thinking about trying spaghetti squash latkes for awhile (thinking I’d squeeze their liquid out in a dish towel first) — not sure how that type would work though! Anyway…yum to yours!

    i hear you, after work (or before a baseball game!) it is just so easy to roast a bunch of veggies or make rice/pasta than something more involved!

  6. Add a little bit of cumin into this (if you like cumin) and it will be a delicious storm. Storm or deliciousness.
