Dudes. Seriously, I am amazed at all the nice comments from yesterday. I am still taking the time to go back and reply to every single one. It was kind of nerve-wracking putting myself out there with a “hey I just quit my job and I am going back to school for something completely different.”
I am really exciting about all the changes and it couldn’t come at a better time in my life.
On that note, it’s Friday! Since I was at home all week I had the time to actually cook dinner for Eric and photograph it, so I thought I would share a few photos.
The other day, on our way to Whole Foods, I said to Eric I wanted to buy some tomatillos and make green salsa. He replied that it probably wasn’t tomatillo season and my heart kind of sank. BUT I WANTED TOMATILLOS.
Well lo and behold Whole Foods did have tomatillos, and they were LOCAL.
I came home and go to to work on a green salsa recipe. This is the day I used the vitamix 4 times…atleast I am getting my money’s worth.
But my salsa recipe kind of failed. If anyone has any good ones, I am all ears.
I continued with dinner and made squash and sweet potato enchiladas. They were good, but they needed a great sauce.
Another night we had a ‘beefed’ up fettuccine. It had a quick ragu using veggieburger meatballs, eggplant, onions and topped with braised tatsoi, cashew cheese, and nooch.
