and it didn’t fall apartment when i stuffed it full of tabouli.

homemade pita bread

pita bread
makes 8
1 cup warm water
2 teaspoons yeast
2 1/2 cups flour (i used 2 cups all purpose and 1/2 cup whole wheat)
2 teaspoons salt
1 teaspoon olive oil

mix the water and yeast together and let sit for about 5 minutes.
add the flour, salt and oil and stir till a shaggy dough is formed.
sprinkle flour on your work surface and turn out the dough.
knead the dough until it becomes smooth and elastic, about 5-10 minutes.
place the dough in an oiled bowl and cover with plastic wrap or a clean towel.
allow the dough to rest for 1-2 hours, until it has doubled in size.
preheat oven to 400 degrees and place your baking sheet in the middle rack.
gently defleat the dough and turn it out on a floured surface.
divide the dough into 8 equal pieces.
using a rolling pin, roll the pieces into 8 inch wide circles and about a quarter inch thick. don’t be scared to make them too thin, the thinner pieces worked so much better than the thicker ones.
place the rolled-out pitas directly onto the baking sheet, fitting as many as possible without overlap.
the pita will start to puff up and when it is fully puffed it should be finished. this took approximately 3-5 minutes, i just sat there and watched the pitas in the oven.
